How is everyone doing on their New Year’s resolutions?  If you remember from this past post here, one of my goals this year was to get back to clean eating/paleo lifestyle. So far I have been doing a good job, even though I did have ice cream this past Sunday….. oops 😉 It is all about balance and the ice cream was so good, I do not feel guilty about it. On Monday, however, it was back to healthy eating for me. If you have been following my Snapchats (@mtate24), then you already know that I started doing Sweat With Kayla app, created by Kayla Itsines. It has different 30 minute workouts to do daily, along with meal plans and a grocery list. I wanted to start with her app before buying her BBG guides because her app is cheaper and I didn’t want to pay the full price for the guides right away. Anyway, I like her meal plans better than her workouts. I find her workouts to be nothing new or moves that I am not already doing. It is nice, however, to have if I do not have time to go workout. If I decide to get her guides, I will just buy the meal plan guide. I haven’t religious followed her meal plan because of a few reasons:

1) my gluten sensitivity and it is not GF friendly, so I can’t really make some of the meals.

2) there are some meals I do not like—like curry

Even though I am not religiously following it, I have picked up some new recipes that I love and have enjoyed making. One of her recipes is a simple cucumber, egg, cracker snack. I think this would be a great healthy appetizer to bring to a party…. hello Superbowl! It is SUPER easy to make and taste pretty good!

Ingredients

 eggs (this will depend on how many people you want to serve, 1 egg will get you 6 pieces)

crackers— I use sea salt GF crackers from Glutino. I think the salted crackers make for a nice extra flavor.

First you want to hard-boil the egg(s).  Place the egg(s) in a water filled pot. Cover the pot and turn on the stove to mid-high. Wait until it starts to boil and turn it dow to simmer. I leave it there for about 10-15ish minutes. While the egg hardens, start slicing the cucumbers (to your liking and based on how many people you are serving). After the egg is done, slice off 6 pieces–warning: let it cool for a few minutes as it will be hot.  Place the egg slice on top of the cracker and the sliced cucumber following it. And there you have it! Easy, hassle free, healthy, and not to mention yummy! Serve this at a party and do not feel bad about ruining your New Year’s resolution.
